2 lb. Cauliflour florets
2 lb. Carrots, peeled & bias cut
11/2 lb. Zucchini, large dice
11/2 lb. Red bell peppers, large dice
1 lb. Red onion large wedge or chunks
1/3 cup EVOO
1/4 cup Latin Herb Liquid Flavor Concentrate
2 tbls Fresh lemon juice
2 tsp Kosher salt
1 tsp Black pepper
1 tsp Grnd. Cumin
1 tsp Dried Oregano
Garnish  
1/4 cup Fresh chopped pasley
PREPARATION

  1. Preheat oven to 425°F. Line two sheet pans with parchment or lightly oil.
  2. In a large bowl, whisk olive oil, Latin Herb Liquid Flavor Concentrate, lemon juice, salt, pepper, cumin, and oregano.
  3. Toss vegetables thoroughly with the seasoning mixture until evenly coated.
  4. Spread vegetables in a single layer across sheet pans, leaving space for proper roasting.
  5. Roast 20 minutes, rotate pans, then roast an additional 10–15 minutes until vegetables are tender and well caramelized.
  6. Finish with fresh chopped parsley and a squeeze of citrus just before service.
