Curried Brown Rice and Apricots

What You'll Need

Yield: 1 gallon

Amount Ingredients
1/3 cup Vegetable Oil
1-1/2 qts. Onions, Medium Diced
1-1/2 tsp. Garlic, Fresh Minced
1-1/2 cups Apricots, Medium Diced
1/3 cup Brown Sugar
1/8 cup Gluten Free Curry Powder
5 lbs. / 3 qts. Brown Rice, Cooked
1/4 cup Custom Culinary® Gold Label Mirepoix Base
3/4 cup Lemon Juice
1-1/2 tsp. Black Pepper, Fresh Ground
1-1/2 tsp. Thyme, Dried
PREPARATION

  1. In an (8 quart) cook pot over medium high heat, sauté onions and garlic 2-3 minutes. Add apricots, sugar and curry powder. Mix well and sauté 1-2 minutes.
  2. Add rice, Gold Label Mirepoix Base, lemon juice, pepper and thyme, mix well.
