Roasted Vegetable Flavored Polenta

Roasted Vegetable Flavored Polenta is made with Custom Culinary® True Foundations® Roasted Vegetable Base, cornmeal, garlic, and parmesan cheese. It's a delicious side dish that perfectly complements any main course.

Amount Ingredients
2-1/2 qts. Water
4 oz. Custom Culinary® Gold Label Savory Roasted® Vegetable Base
12 oz. Yellow Corn Meal
1/2 Tbsp. Garlic, Fresh, Minced
2/3 cup Parmesan Cheese, Fresh, Grated
1/2 tsp. White Pepper, Ground
PREPARATION

  1. In a (1 gallon) cook pot over medium high heat, dissolve Gold Label Savory Roasted Vegetable Base in water. Bring to a boil. “Rain” in cornmeal while whisking constantly to insure no lumping. Add garlic, Cook over low heat for 45 minutes, stirring occasionally.
  2. Stir in parmesan cheese and pepper.
  3. Brush 2 full size sheet pans with water and divide polenta mixture equally between both pans. Allow it to cool slightly.
  4. Refrigerate until set firm - approx 1 hour. Score Polenta into (3 oz.) portions. Reheat in oven or sauté in butter to serve hot.
