Amount Ingredients
10 lbs. Onions, Julienne Cut
6 ea. Granny Smith Apples, Peeled, Seeded, Diced
1/2 lb. Butter, Lightly Salted
1 bottle 25 oz. Apple Jack Brandy
8 oz. Custom Culinary® Gold Label Beef Base
10 oz. Custom Culinary® Gold Label Chicken Base
1 Tbsp. Garlic Powder
3 ea. Bay Leaves
1 tsp. Nutmeg, Ground
4-1/2 gal. Water
PREPARATION

  1. In a large braising pan or tilt skillet melt butter over medium heat. Add onions. Sauté over medium heat for approximately 13-15 minutes or until evenly browned, stirring frequently.
  2. Add apples. Sauté over medium heat 5-7 minutes, stirring frequently.
  3. Add apple juice brandy to deglaze pan.
  4. Add Gold Label Beef and Chicken Base, garlic powder, bay leaves and water. Heat to boiling.
  5. Reduce heat and gently boil 25-30 minutes, stirring occasionally. Remove bay leaves before serving.
