Cauliflower and Bean Chili

A plant-forward bowl packed with flavor. Featuring Master’s Touch® Roasted Garlic Flavor Concentrate and Gold Label Savory Roasted® Vegetable Base, Cauliflower and Bean Chili brings together cauliflower and pinto beans with rich roasted vegetable tomato sauce topped with crema and cilantro.


What You'll Need

1/2 head Cauliflower, trimmed and coarsely chopped
1 ea Onion, large, diced
1 ea Green Bell Pepper, diced
1 ea Red Bell Pepper, diced
3 ea  Carrots, diced
3 Tbsp Chili powder
1 Tbsp Cunim, ground
1 Tbsp Tomato Paste
1 28 oz can Whole Peeled Tomatoes
2 cups Water
1 tsp Gold Label Savory Roasted® Vegetable Base
1/2 tsp Master’s Touch® Roasted Garlic Flavor Concentrate
2 - 15 oz cans Pinto Beans with liquid
To taste Kosher salt
To taste Ground Black Pepper 
2 Tbsp Extra Virgin Olive Oil
PREPARATION

  1. Heat olive oil in heavy bottom pot over medium heat
  2. Add onions, bell peppers, carrots and season with salt
  3. Cook until softened
  4. Add chili powder, cumin, and tomato paste and stir
  5. Cook to deep red
  6. Add tomatoes, vegetable stock, pinto beans
  7. Simmer over medium-low heat stirring occasionally until thickened - about 1 hour and 15 minutes
  8. Stir in coarsely chopped cauliflower and simmer 10 minutes
  9. Adjust seasoning with salt and pepper
  10. Top as desired
