Yield: 2 gallons

Amount Ingredients
2 lbs Ground Chuck
12 oz. Onions, Medium Diced
8 oz. Flour, All Purpose
3-3/4 qts Water, Hot
1-1/2 qts Half & Half Cream
6 oz. Custom Culinary® Gold Label Beef Base, No MSG Added
2 lbs Potatoes, Medium Diced
24 oz. Tomatoes, Canned, Diced
3/4 tsp. White Pepper, Ground
1 lb Sharp Cheddar Cheese

  1. In a heavy 3 gallon sauce pot, sauté beef and onions over medium heat until beef is lightly browned, stirring frequently.
  2. Add flour. Stir until well blended. Cook 2-3 minutes, stirring constantly.
  3. Add water, cream, Custom Culinary® Gold Label Beef Base, potatoes, tomatoes and pepper, mixing well. Heat to boiling, stirring frequently. Reduce heat to a slow boil for 10-12 minutes until potatoes are tender, stirring occasionally.
  4. Add cheese. Stir until melted and well blended.
