Yield: 198 oz.

1 pouch (6 lb) True Foundations® Latin-Style Vegetable Broth
1 ½ cups guajillo chile powder
¾ cup ancho chile powder
2 ea. large white onions, chopped
16 ea. garlic cloves
1 tbsp cumin
1 tbsp Mexican oregano
1 tbsp apple cider vinegar
to taste black pepper
10 lbs beef chuck, trimmed, cut into 1-inch cubes
Kosher salt to taste
½ cup all-purpose flour (optional, for dusting beef)
3 tbsp olive oil
PREPARATION

  1. In a saucepan, bring 5 cups broth to a simmer. Add chile powders and onions; cook until onions are tender.
  2. Transfer mixture to blender. Add garlic, cumin, oregano, vinegar, pepper, and a pinch of salt. Blend until smooth.
  3. Season beef cubes with salt and pepper. Optional: dust lightly with flour.
  4. Heat oil in a rondeau/tilt skillet. Sear beef in batches until browned. Set aside.
  5. Return beef to pot. Pour chile sauce over meat. Stir in remaining 6 ½ cups broth.
  6. Bring to a boil, then reduce heat to low. Cover and simmer until beef is fork-tender and sauce is rich, about 1.5–2 hours.
  7. Garnish with cilantro & serve.
