Classic French Onion Soup

Yield: 1 1/2 gallons

3 oz Oil, vegetable
10 lbs Onions, julienned ¼” thick
8 oz Sherry
4 qt Water
12 oz Custom Culinary® Gold Label Savory Roasted® Beef Base
Garnish Baguette, sliced toasted
Garnish Gruyere cheese, sliced
Garnish Parmesan cheese, grated

  1. Pre-heat a large rondo over medium heat for 3-5 minutes.
  2. Add oil and then onions. Allow onions to slowly caramelize stirring as needed, approximately every 2-3 minutes.
  3. Cook for 30-45 minutes until onions are deep brown.
  4. When onions are thoroughly caramelized, add sherry and reduce till nearly dry.
  5. Add water.
  6. Add beef base and stir until it melts and combines with water and onions well.
  7. Simmer for 10 minutes.
  8. To prepare for serving, add onion soup to an oven-safe cup or bowl.
  9. Top with a toasted baguette slice, Gruyere cheese, and a sprinkling of parmesan.
  10. Brown the cheese under the salamander or in a hot oven for 2-3 minutes.
