Cream of Broccoli Soup

Yield: 5 gallons

Amount Ingredients
2 lbs. Onions, Finely Chopped
1/2 cup Vegetable Oil
10 lbs. Broccoli, Cut
3 gal. Water, Hot Plus Reserved Broccoli Liquid
12 oz. Custom Culinary® Gold Label Chicken Base
3 (20-oz.) bag Custom Culinary® Whisk & Serve® Cream Soup & Sauce Starter
2 tsp. White Pepper, Ground
PREPARATION

  1. In a large sauce pot, compartment steamer, or steam jacketed kettle, cook broccoli until tender, but not mushy. Drain broccoli. Reserve liquid.
  2. In a 10 gallon steam jacketed kettle, heat vegetable oil. Add onions. Sauté over medium heat for 4-6 minutes, stirring frequently.
  3. Add water, reserved broccoli liquid, and Gold Label Chicken Base, mixing well. Gradually add Whisk & Serve® Cream Soup & Sauce Starter, mixing constantly with a wire whip.
  4. Add cooked broccoli pieces, mixing gently. Add white pepper. Heat to boiling then reduce heat and gently boil 3-4 minutes, stirring occasionally.
