Curried Cream of Cauliflower Soup

Amount Ingredients
12 oz. Custom Culinary® Gold Label Chicken Base
2 gal. Water
1-1/2 (20-oz.) bags Custom Culinary® Whisk & Serve® Cream Soup & Sauce Starter
1-1/2 gal. Milk
8 lbs. Cauliflower, Frozen, Thawed, Fine Chopped
1-1/2 lbs. Cheddar Cheese, Grated
1 tsp. White Pepper, Ground
2 oz. Curry Powder
PREPARATION

  1. In a 10 gallon steam jacketed kettle, add water and Gold Label Chicken Base, mixing well.
  2. Gradually add Whisk & Serve® Cream Soup & Sauce Starter, stirring constantly with a whip. Heat to boiling. Reduce heat and gently boil 3 minutes, stirring frequently.
  3. Add milk, cauliflower, curry and white pepper, mixing well. Heat to boiling. Reduce heat and gently boil 20 minutes, stirring frequently.
  4. Add cheese, mixing well. Heat and stir until cheese is melted.
