Down Home Beef Stew

A robust combination of hearty flavors that bring warmth anytime of the year. Featuring Custom Culinary® Gold Label Beef Base, Down Home Beef Stew combines the rich flavors of beef, onion, garlic, tomato, bay, thyme, celery, carrots, potatoes, and peas.


What You'll Need

Yield: 3 gallons

Amount Ingredients
10 lbs. Beef, Cubed
4 oz. Vegetable Oil
1 lb. Onion, Diced
1/2 cup Garlic, Minced
3/4 cup Flour
1 cup Tomato Paste
3 oz. Custom Culinary® Gold Label Beef Base
3 qts. Water
4 leaves Bay
2 tsp. Thyme
1 lb. Celery, Diced
2 lbs. Carrots, Diced
2 lbs. Potatoes, Raw, Diced
1/2 # 10 can Tomato, Diced
2 lbs. Peas
PREPARATION

  1. In a large roasting pan or tilt skillet, heat oil over medium high heat. Add beef and brown evenly, stirring frequently.
  2. Add onions and garlic. Saute 5-7 minutes, stirring frequently.
  3. Add flour, mixing well. Cook 3-4 minutes, stirring constantly.
  4. Add tomato paste, Custom Culinary® Gold Label Beef Base, water, bay leaves and thyme, mixing well. Braise in a 325°F oven for 1 hour. Remove bay leaves.
  5. Add celery, carrots, potatoes, and tomatoes. Braise 45 minutes at 325°F.
  6. Add peas, mixing well. Cook another 5-7 minutes.
