Lobster Bisque

Amount Ingredients
14 oz. Butter
14 oz. All Purpose Flour
1-1/2 gal. Water
8 oz. Custom Culinary® Gold Label Lobster Base, No MSG Added
1/8 tsp. Ground Red Pepper
2 qts. Half and Half
1 cup Sherry, Pale Dry
1 lb. Lobster Meat, Cooked, Small Diced (Optional)
PREPARATION

  1. In a 2 gallon sauce pot over medium high heat, melt butter and stir into flour. Cook for 2-3, stirring constantly.
  2. Add water, Custom Culinary® Gold Label Lobster Base and red pepper. Blend thoroughly to eliminate lumps. Bring to a boil. Reduce heat to medium, cook slowly 8 - 10 minutes.
  3. Add cream and sherry, cook 2-3 minutes, remove from heat.
  4. Optional: Add a garnish of ½ oz. cooked lobster meat per portion.
