Manhattan Clam Chowder

Amount Ingredients
12 oz. Bacon, Diced
2 lbs. Onions, Diced
2 lbs. Celery, Diced
12 oz. Green Bell Peppers, Diced
1 cup Tomato Paste
1 # 10 can Tomatoes, Chopped, Canned
6 (51-oz.) cans Clams, Chopped, Canned
1 lb. Custom Culinary® Gold Label Clam Base
4 gal. Water
1 lb. Butter
1/4 lb. Flour
2 tsp. White Pepper, Ground
PREPARATION

  1. In an 8 gallon sauce pot or 10 gallon steam jacketed kettle, add bacon. Saute over medium high heat, stirring frequently until browned.
  2. Add butter. Melt over medium high heat. Add onions, celery and green peppers. Saute 3-5 minutes, stirring frequently.
  3. Add flour, mixing well. Cook 3-5 minutes, stirring constantly.
  4. Add tomato paste, tomatoes, clams, Custom Culinary® Gold Label Clam Base, water, and white pepper, mixing well. Heat to boiling. Reduce heat and gently boil 20-30 minutes, stirring occasionally.
