Amount Ingredients
6 oz. Vegetable Oil
1 lb. Onions, diced
1 lb. Celery, diced
1 lb. Carrots, diced
1/2 cup Garlic, minced
12 oz. Custom Culinary® Gold Label Beef Base
2 gal. Water
2 # 10 cans Tomatoes, chopped, canned
12 oz. Tomato Paste
1 # 10 can Kidney Beans, canned, drained and rinsed
2 lbs. Potatoes, diced
1 cup Basil
1/2 cup Oregano
1 lb. Elbow Macaroni or Ditilani pasta
1  # 10 can Cannellini Beans, canned, drained and rinsed
1 lb.
1 lb.
Zucchini, diced
Escarole or Spinach, rough chopped
2 cups Italian Parsley, chopped
1 lb. Parmesan Cheese, grated

  1. In a 10 gallon steam jacketed kettle or 8 gallon sauce pot, heat olive oil over medium high heat. Add onions, celery, carrots and garlic. Saute over medium heat 5-7 minutes, stirring frequently.
  2. Add water, Custom Culinary® Gold Label Beef Base, tomatoes, tomato paste, and kidney beans, mixing well. Heat to boiling. Reduce heat and gently boil 20 minutes, stirring frequently.
  3. Add potatoes, basil and oregano, macaroni, and garbanzo beans. Heat to boiling. Gently boil 15-20 minutes until macaroni is tender, stirring frequently.
  4. Add zucchini, parsley and parmesan cheese, mixing well. Gently boil 5 minutes, stirring frequently.
