Moqueca (Brazillian Seafood Stew)

Moqueca is a traditional Brazillian seafood stew, featuring Custom Culinary® Gold Label® Shrimp Base, coconut milk and chilies, and sustainably-sourced farm-raised seafood.

What You'll Need

Recipe Ingredients
16 oz. Water, hot
1½ tsp. Custom Culinary® Gold Label Shrimp Base
   
2 Tbsp. Olive oil
4 Tbsp. Red bell pepper, julienne cut
3 Tbsp. Yellow onion, julienne cut
cup Plum tomatoes, peeled
2 Tbsp. Dedo de moca or red fresno chili, sliced
   
¼ cup White wine, dry
¼ cup Unsweetened coconut milk, well-shaken
1 tsp.  Dendê red palm oil or olive oil
   
2-3 oz. Talapia, farm-raised, boneless, skinless, 2" pcs.
6 ea. Mussels, fresh, farm-raised
4 ea. Clams, fresh, littleneck or local
4 ea. Shrimp, medium (21-25 ct.), raw, peeled and deveined
   
¾ cup White rice, prepared, hot
   
5-6 ea. Cilantro, fresh, leaves
1 ea. Lime wedge
PREPARATION

Broth:
  1. Blend shrimp base with hot water.
  2. Set aside (lobster or clam base may be used as desired).
Stew:
  1. In a large skillet over medium high heat, add olive oil and sauté bell peppers, onions,  tomatoes and chilies.
  2. Cook 2 minutes.
  3. Add prepared shrimp broth, coconut milk and dendê palm oil (or olive oil).
  4. Bring to a boil.
  5. Add fish, mussels and shrimp.
  6. Cover and cook 2-3 minutes until seafood is just cooked - do not overcook.
  7. Serve immediately in a bowl layered with prepared hot white rice and all stew ingredients.
  8. Garnish with fresh cilantro leaves and served with a wedge of lime.
