Prepared Clam Broth
12 cups
white beans, cooked
10 cups
diced potatoes
5 cups
diced celery
5 cups
diced onions
1 1/2 cups
olive oil
1/3 cup
lemon zest
garnish
parsley
4–5 lb
cooked seafood (shrimp, scallop, whitefish)
PREPARATION
Sauté onions and celery in olive oil until softened.
Add potatoes; sauté 2 minutes.
Add beans + entire gallon of Clam Base broth.
Simmer 20–25 minutes until potatoes are tender.
Add seafood (if using) and warm gently.
Finish with lemon zest and garnish.
