Yield: 5 gallons

Amount Ingredients
1/2 cup Vegetable Oil
2 lbs. Carrots, Diced
2 lbs. Celery, Diced
2 lbs. Onion, Diced
1 lb. Custom Culinary® Gold Label Low Sodium Chicken Base
4 gal. Water
2 lbs. Orzo
2 tsp. White Pepper, Ground
6 Tbsp. Parsley, Chopped
PREPARATION

  1. In an 8 gallon sauce pot or 10 gallon steam jacketed kettle, heat vegetable oil over medium high heat. Add carrots, celery, and onions. Saute 5-7 minutes, stirring frequently.
  2. Add water and Custom Culinary® Gold Label Low Sodium Chicken Base, mixing well. Heat to boiling.
  3. Add orzo and white pepper, mixing well. Heat to boiling, stirring frequently. Reduce heat and gently boil until orzo is tender. Add parsley, mixing well.
