Yield: 1 1/2 gallons

Amount Ingredients
1 lb. Chorizo Sausage, Cut in Half Lengthwise & Sliced
6 oz. Custom Culinary® Gold Label Low Sodium Chicken Base
5 qts. Water, Hot
3 Tbsp. Olive Oil
3 Onions, Diced Fine
6 lbs. Potatoes, Peeled and Sliced
12 cloves Garlic
3 lbs. Kale, Trimmed, Washed & Large Dice Chopped
1/2 tsp. Ground Black Pepper
PREPARATION

  1. In a small saute pan, saute chorizo until evenly browned, stirring frequently. Drain and set aside.
  2. In a 3 gallon sauce pot heat olive oil over medium high heat. Add onions and saute 7-10 minutes, stirring frequently.
  3. Combine water, Custom Culinary® Gold Label Low Sodium Chicken Base, mixing well. Add potatoes and garlic. Heat to boiling. Reduce heat and gently boil 12-15 minutes until potatoes are tender.
  4. Remove potatoes and garlic with a slotted spoon or drain reserving stock. Lightly mash potatoes and garlic. Return to reserved stock mixing well.
  5. Stir in kale. Gently boil 5 minutes. Add chorizo and pepper, mixing well.
