Potato Cream Soup

What You'll Need

Yield: 2 gallons

Amount Ingredients
1/2 cup Butter
1-1/2 cups Onions, fine diced
5 qts Water, hot
1/4 cup Custom Culinary® Gold Label Chicken Base
2 Tbsp. Custom Culinary® Gold Label Ham Base
2 qts Cream, half and half
4 lbs Potatoes, large diced
10 oz. Whisk & Serve® Instant Cream Soup Base
Dash White pepper, ground
PREPARATION

  1. In a soup kettle over medium high heat, melt butter. Add onions and sweat 2-4 minutes.
  2. Add water, chicken base, ham base, half and half and blend thoroughly.
  3. Add potatoes, bring to a boil. Reduce heat and simmer 6-8 minutes or until potatoes are tender. Puree soup using a hand immersion-style blender.
  4. Purée soup, using a hand immersion style blender.
  5. Reduce heat. Slowly add Whisk & Serve® Instant Cream Soup and Sauce mix, stirring briskly with a wire whisk until smooth. Gently boil 2-4 minutes. Season with ground white pepper.
