Pozole Rojo con Pollo

A south of the border favorite - chicken, hominy, citrus and latin spices make up this flavorful soup that is sure please the palate.

What You'll Need

10 lbs Chicken thighs, diced
2 ea Large onions, medium diced
2 ea Red Bell Peppers, medium diced
1 - #10 can White Hominy
8 - 2# bags Custom Culinary® Latin-Style Citrus Chili Sauce
Garnish  Shredded cabbage
Garnish Sliced radish
Garnish Chopped cilantro
Garnish Scallions, chopped
PREPARATION

  1. Sauté diced chicken thighs until lightly browned and remove from pan.
  2. Sauté onion and red bell peppers in same pan until translucent.
  3. Add the browned chicken thighs back in and mix with onions and peppers.
  4. Add hominy and stir together.
  5. Add Latin Citrus Chili Sauce.
  6. Bring to a boil while stirring.
  7. Reduce to simmer and cook 30-40 minutes.
  8. Serve in shallow bowl and garnish with cabbage, radish, cilantro and green onion.
