Yield: 1.5 gallons

Amount Ingredients
8 oz. Bacon, Small Diced
8 oz. Butter, Lightly Salted
4 oz. Celery, Medium Diced
5 oz. Green Onion, Thin Sliced
10 oz. All Purpose Flour
5 qts Water, Hot
3 oz. Custom Culinary® Gold Label Chicken Base, No MSG Added
1 oz. Custom Culinary® Gold Label Ham Base, No MSG Added
27 oz. Sauerkraut, Drained, Chopped
12 oz. Corned Beef, Cooked, Julienne Cut
1 tsp. Caraway Seeds
8 oz. Processed Swiss Cheese
PREPARATION

  1. In a heavy 2 gallon saucepot, cook bacon until lightly browned, stirring frequently. Do not drain fat.
  2. Add butter and heat until melted. Stir in celery and onions. Sauté 2-3 minutes over medium heat, stirring constantly.
  3. Add flour. Stir until well blended. Cook 2-3 minutes, stirring constantly.
  4. Stir in water, Custom Culinary® Gold Label Chicken Base and Ham Base, sauerkraut, corned beef and caraway seeds. Heat to a slow boil for 8-10 minutes, stirring occasionally.
  5. Add cheese. Stir until melted and well blended.
  6. Serve with a toasted pumpernickel crouton topped with shredded Swiss cheese. Melt under a broiler.
