Yield: 1 gallon

2 Tbsp Butter
2 Slices Thick Cut Bacon, small dice
2 Cups Onions, small dice
2 Cups Celery, small dice
1 each Bay Leaf
3 Qt Water
3 Cups Yukon Gold Potatoes, medium dice
3 Tbsp Custom Culinary® Master’s Touch® Roasted Garlic Flavor Concentrate
2 Tbsp Custom Culinary® Gold Label Savory Roasted® Chicken Base
¼ Cup Italian Parsley, chopped
1 Cup Garlic Cloves, roasted
¼ Cup Chili Powder
½ Cup Chives, chopped

  1. Melt butter in 6 qt. pot over medium heat. Add bacon and brown and render fat.
  2. Add celery, onion and bay leaf and sauté until onions become translucent.
  3. Add flour and stir in whisking constantly forming a blonde roux.
  4. Allow to cook approximately 2-3 minutes.
  5. In a separate pot, cook diced potatoes in water until cooked through.
  6. Remove potatoes and hold.
  7. Add heavy cream, garlic paste and chicken base and bring to a simmer, until base is completely dissolved.
  8. Slowly add the liquid to the roux mixture, stirring constantly until all liquid is incorporated and thickened.
  9. Add the diced potatoes, chopped parsley, and roasted garlic cloves and simmer 5 minutes.
  10. Hold and serve to order garnished with chili powder and chopped chives.
