Yield: 40 (6 oz portions)

2 tbsp. Butter or Oil
2 cups Diced Yellow Onion
4 cloves Garlic, minced
10 cups Fire-Foasted Corn, fresh or frozen
7 cups Yukon Gold Potatoes small diced
5 cups Cooked Shredded Chicken
1 gal. Custom Culinary® Chef's Own® Chicken Flavored Gravy Mix (prepared)
2 cups Heavy Cream
To Taste Kosher Salt & Pepper
Garnish Scallions, thin-sliced
PREPARATION

  1. In a large stockpot, sauté onions and garlic in butter until translucent.
  2. Add potatoes and corn; sauté 3–4 minutes.
  3. Pour in prepared poultry gravy and bring to a gentle simmer. Cook until potatoes are tender (15–20 minutes).
  4. Stir in cooked chicken and cream if using. Adjust seasoning.
  5. Serve hot, garnish with scallions.
