Vegan Curried Carrot Soup

A robust combination of hearty flavors that bring warmth anytime of the year. Featuring Custom Culinary® True Foundations Vegetable Liquid Stock Concentrate, Vegan Curried Carrot Soup consists of carrots, coconut milk, lime, and aromatics.

What You'll Need

1 Tbsp. Coconut oil or extra-virgin olive oil
3 oz. Yellow onion, diced
13 oz. Carrots, peeled and cut into ½-inch chunks
1 ea. Ginger, 1 inch piece, peeled and chopped
To taste Kosher salt
2 Tbsp. Curry powder 
2 cups Prepared broth, made from True Foundations®  Vegetable Liquid Stock Concentrate
6 oz. Coconut milk
1 tsp. Fresh lime juice
Garnish Cilantro
Garnish Ground sumac
Garnish Peanuts, roasted and salted, chopped
PREPARATION

  1. Heat a large pot of Dutch oven over medium heat.
  2. Add oil, onion, carrots, ginger, and 1 teaspoon salt; stir to combine.
  3. Cook until starting to soften, stirring occasionally, about 10 minutes.
  4. Add curry powder and cook 2 minutes. 
  5. Stir in prepared vegetable broth and bring to a boil over high heat.
  6. Reduce heat to medium and simmer until softened, 10–15 minutes. 
  7. Purée soup using an immersion blender or in batches using a standard blender.
  8. Stir in milk and season with salt to taste. 
  9. Serve soup with cilantro, chopped peanuts and a dash of sumac.
