Chesapeake Bay Style Crab Cakes

2 Tbsp. Olive Oil
1/4 cup Onions, Minced
1/4 cup Celery, Peeled, Minced
1/2 cup Red Pepper, Minced
3/4 cup Mayonnaise
2 Beaten Eggs
1 Tbsp. Lemon Juice, Fresh
1/2 Tbsp. Lemon Zest
1 Tbsp. Old Bay® Seasoning
1/4 tsp. Hot Red Pepper Sauce
1/2 tsp. Custom Culinary® Master’s Touch® Roasted Garlic Flavor Concentrate
1 Tbsp. Custom Culinary® Gold Label Lobster Base, No MSG Added
3/8 cup Bread Crumbs, Plain
1/2 cup Parmesan Cheese, Fresh Grated
2 lbs. Lump, Crab Meat
PREPARATION

  1. In a sauté pan, heat olive oil over medium high heat. Add onions, celery, and red peppers. Sauté 5-7 minutes, sitrring frequently. Set aside.
  2. In a large mixing bowl, combine mayonnaise, eggs, lemon juice, lemon zest, red pepper sauce, old bay seasoning, Master’s Touch® Roasted Garlic Flavor Concentrate, Gold Label Lobster Base, and sautéed vegetables, mixing well.
  3. Add bread crumbs and parmesan cheese, mixing well. Gently fold in crab meat until well blended.
  4. Form mixture into equal portion cakes. Sauté in a lightly oiled sauté pan or griddle until evenly browned on both sides. Place on a baking sheet. Bake 5-7 minutes at 350°F.
