Virgin Island Style Crab Cakes

4 Tbsp. Olive Oil
1/2 cup Onions, Minced
1/2 cup Celery, Peeled, Minced
1 cup Red Pepper, Minced
1-1/2 cup Mayonnaise
4 each Eggs, Beaten
2 Tbsp. Lime Juice, Fresh
1 Tbsp. Lime Zest
2 Tbsp. Caribbean Jerk Seasoning
1/2 tsp. Hot Red Pepper Sauce
1 tsp. Garlic, Minced
2 Tbsp. Custom Culinary® Gold Label Lobster Base
3 cups Bread Crumbs, Plain
1/4 cup Parsley, Fresh Chopped
1 cup Parmesan Cheese, Fresh Grated
3 lbs. Lump, Blue or King Crab Meat
PREPARATION

  1. In a sauté pan over medium high heat, sauté onions, celery and pepper in oil for 2-3 minutes until onions are translucent. Chill mixture.
  2. In a separate stainless steel mixing bowl, combine mayonnaise, eggs, lime juice and zest, caribbean jerk seasoning, hot red pepper sauce, garlic and Gold Label Lobster Base. Add chilled sautéed vegetables, blend thoroughly.
  3. Add bread crumbs, parsley and cheese, blend thoroughly. Carefully fold in crab meat.
  4. Form mixture into individual 2 oz. portions. Cook in lightly oiled sauté pan or griddle on medium high heat until golden on each side.
