Amount Ingredients
4 Tbsp. Olive Oil
1/2 cup Onions, Minced
1/2 cup Celery, Peeled, Minced
1 cup Red Pepper, Minced
1-1/2 cup Mayonnaise
4 each Eggs, Beaten
2 Tbsp. Lime Juice, Fresh
1 Tbsp. Lime Zest
2 Tbsp. Caribbean Jerk Seasoning
1/2 tsp. Hot Red Pepper Sauce
1 tsp. Garlic, Minced
2 Tbsp. Custom Culinary® Gold Label Lobster Base
3 cups Bread Crumbs, Plain
1/4 cup Parsley, Fresh Chopped
1 cup Parmesan Cheese, Fresh Grated
3 lbs. Lump, Blue or King Crab Meat
PREPARATION

  1. In a sauté pan over medium-high heat, sauté onions, celery, and pepper in oil for 2-3 minutes until onions are translucent—chill mixture.
  2. combine mayonnaise, eggs, lime juice and zest, Caribbean jerk seasoning, hot red pepper sauce, garlic, and Gold Label Lobster Base in a separate stainless steel mixing bowl. Add chilled sautéed vegetables and blend thoroughly.
  3. Mix thoroughly with bread crumbs, parsley, and cheese. Carefully fold in crab meat.
  4. Form mixture into individual 2 oz. portions. Cook in a lightly oiled sauté pan or griddle on medium-high heat until golden on each side.
