Baja Food Truck Style Fish Taco

Amount Ingredients
  Pan Fried Low Sodium Gravy Dusted Fish:
2 each Mahi Mahi or other firm flesh fish, boneless skinless, cut into ¾ oz, strips
3 1/5 g PanRoast® Low Sodium Country Gravy Mix
  Cabbage Slaw:
1/8 cup White and Red Cabbage, Shaved fine
1 Tbsp Cilantro, Fresh, Rough Chopped
1 1/2 Tbsp Chimichurri Sauce (see recipe)
  Chipotle Lime Crema / Sour Cream  
1 Tbsp Crema or sour cream
1 tsp Master's Touch® Chipotle Flavor Concentrate
½ Lime – Juice only
1 each Corn Tortilla, Grilled or Warmed
PREPARATION

  1. Dust fish with gravy mix and pan fry until cooked through.
  2. Toss shaved cabbage with Chimichurri Sauce and cilantro leaves to evenly coat
  3. Mix Crema, lime and Chipotle Paste together.
  4. Assemble the Taco – place half of the cabbage slaw in the tortilla, top with hot cooked fish pieces and remaining half of the cabbage slaw. Drizzle with Chipotle Crema.
