Angel Hair Pasta with Wild Mushrooms

Amount Ingredients
1-1/2 lbs. Crimini Mushrooms, Sliced
1-1/2 lbs. Morel Mushrooms, Whole
1-1/2 lbs. Portabello Mushrooms, Sliced
1-1/2 lbs. Trumpet Mushrooms, Whole
3 lbs. Champignon Mushrooms, Sliced
1/2 cup Garlic, Chopped
3/4 cup Shallots, Chopped
1-1/2 lbs. Butter, Lightly Salted
1 qt. Madeira Wine
2 Jars Custom Culinary® Master’s Touch® Demi-Glace Sauce Concentrate, Prepared
6 lbs. Angel Hair Pasta, Cooked
1-1/2 qts. Parmesan Cheese, Fresh, Grated
1-1/2 cups Parsley, Fresh, Chopped
PREPARATION

  1. In a large braising pan or tilt skillet melt butter over medium high heat. Add garlic and shallots. Sauté 3-5 minutes, stirring frequently. Add mushrooms. Sauté 3-5 minutes, stirring frequently. (Note: Any mushroom blend can be used) Add wine to deglaze pan.
  2. Prepare Master's Touch® Demi-Glace Concentrate following jar instructions.
  3. Combine sauteed mushrooms, prepared demi-glace and angel hair pasta, mixing well.
  4. Portion pasta into bowls. Top with parmesan cheese and parsley.
