Char Grilled Chipotle Shrimp Tacos

Familiar ingredients brought together in an innovative format for a twist on a classic dish. Featuring Custom Culinary® Master's Touch® Chipotle Flavor Concentrate, Char Grilled Chipotle Shrimp Tacos is consisting of chipotle pepper jelly glazed shrimp, garnish, and chipotle balsamic drizzle inside of a taco shell.

  Chipotle Pepper Jelly Glaze:
2 oz. Apple Pepper Jelly
1/4 tsp. Custom Culinary® Master's Touch® Chipotle Flavor Concentrate
  Chipotle Balsamic Drizzle (Dressing):
2 oz. Prepared Light Balsamic Salad Dressing
1 Tsp. Custom Culinary® Master's Touch® Chipotle Flavor Concentrate
  Shrimp:
1 Tbsp. Vegetable Oil
12 each 21/25 size, Raw, Peeled and Deveined Shrimp (or Desired Shrimp Size)
  Garnish:
1 each Corn Tortilla, 6”, Grilled or Warm
2 oz. Pickled Onion, Julienne Cut
1 Tbsp. Fresh Red or Green Cabbage, Shaved
1 Tbsp. Queso Fresco
1 Tbsp. Radishes, Fine Sliced
1 Tbsp. Fresh Cilantro
PREPARATION

  1. To prepare the Chipotle Pepper Jelly Glaze: In a medium mixing bowl, blend apple pepper jelly and Master's Touch® Chipotle Flavor Concentrate. For best blend of flavors, prepare in advance and hold refrigerated at least 1 hour before service.
  2. To prepare the Chipotle Balsamic Drizzle: Mix together prepared light balsamic dressing and Master's Touch® Chipotle Flavor Concentrate. For best blend of flavors, prepare in advance and hold refrigerated at least 1 hour before service.
  3. To prepare the shrimp: Lightly toss the shrimp with vegetable oil to evenly coat. Grill 3-4 Minutes on each side cooking to an internal temperature of 165°F. Add hot shrimp to Chipotle Pepper Jelly Glaze; toss to evenly coat.
  4. Build the taco with cabbage, pickled onions, Queso Fresco and radishes. Top with grilled and glazed hot shrimp and fresh Cilantro. Finish with Chipotle Balsamic Drizzle.
