  Marinade for Steak
2 Tbsp. Custom Culinary® Gold Label True Foundations Beef Liquid Stock Concentrate
1/4 cup Vegetable or Olive Oil
1/4 cup Red Wine Vinegar
1 Tbsp. Garlic, Minced
1 Tbsp. Ginger, Peeled and Minced
10 ea. Beef Hanger Steaks, Trimmed, 5-6 oz. each
4 cups Water
1-1/2 oz. Custom Culinary® Gold Label True Foundations Vegetable Liquid Stock Concentrate
1 cup Polenta, Instant
1/4 cup Parmesan or Romano Cheese, Grated
2 Tbsp. Olive Oil
4 cups Shiitake Mushrooms, Sliced Thin
2 Tbsp. Custom Culinary® Gold Label True Foundations Vegetable Liquid Stock Concentrate
1/2 cup Green Onions, Sliced Thin
PREPARATION

  1. For the steak marinade, in a medium bowl, blend Gold Label True Foundations Liquid Stock Concentrate, vegetable oil, vinegar, garlic, and ginger.
  2. Add steaks and toss to coat evenly. Marinate at least 1 hour or overnight for best flavor infusion.
  3. To prepare polenta, season water with Gold Label True Foundations Vegetable Liquid Stock Concentrate and cook per package instructions and finish with the cheese. You can keep this mixture creamy or turn out onto a pan and allow to chill, cut shapes and sear in a hot pan for an added crust texture.
  4. To prepare the mushrooms, sauté the shiitake mushrooms in olive oil 2-3 minutes. Season to taste with the Gold Label True Foundations Vegetable Liquid Stock Concentrate.
  5. To prepare marinated steaks, char grill each steak to desired temperature. Slice Steak and place a ½ cup portion of hot polenta and top with sautéed mushrooms and garnish with green onions.
