Moroccan Style Chicken Tagine

Exotic ingredients brought together to add intense flavors in a familiar application. Featuring Gold Label True Foundations Chicken Liquid Stock Concentrate, Moroccan Style Chicken Tagine combines the bold flavors of za’atar spice, tomatoes, eggplant, onion, garlic, ginger, saffron, tomatoes, and olives.


What You'll Need

Amount Ingredients
1-3/4 LBS Chicken thighs
2 TB Za'atar Spice Blend
2 C Tomatoes, Peeled/ Quartered
4 C Eggplant, 1/2 “diced
2 C Onion, 1/4” dice
1 TB Garlic, minced
1 TB Ginger, minced
1 tsp. Saffron
1/4 C Tomato Paste
1-1/4 C Water
3 TB Gold Label True Foundations Chicken Liquid Stock Concentrate
1-1/4 C Olives, with liquid
1 C Cilantro, whole
PREPARATION

  1. Coat chicken thighs in Za'atar spice blend until evenly coated.
  2. Over high heat, heat Tagine with 1/4 cup of oil until the oil begins to smoke.
  3. Sear chicken thighs on both sides. Remove and set aside.
  4. Add tomatoes, eggplant, and onion to tagine. Cook until golden brown.
  5. Add saffron, garlic and ginger, stir until fragrant.
  6. Add tomato paste and cook until golden brown. Add chicken back to the tagine.
  7. In a separate bowl, whisk together water and chicken base before adding it to the pot.
  8. Bring to a simmer and let cook over low heat for 25 minutes.
  9. Add olives and let cook another 15 minutes.
