Root Vegetable Primavera

Familiar ingredients brought together in an innovative format for a plant-forward twist on a classic dish. Featuring Custom Culinary® Gold Label Alfredo Sauce, Root Vegetable Primavera consists of red peppers, sweet potatoes, carrot, Swiss chard and peas in a thick, creamy sauce. Perfect for meal kits and grab & go applications!

What You'll Need

Recipe Ingredients
4 oz. Sweet Potatoes, peeled, spiral cut, par-cooked 75%, and shocked cold
3 oz. Carrots, Classic Orange or Rainbow, peeled, spiral cut, par-cooked 75%, and shocked cold
1 ½ oz. Red Bell Peppers, medium strips, par-cooked 75%, and shocked cold
1 ½ oz. Peas, fresh or frozen, thawed
1 oz.  Swiss Chard, fresh, rough chopped
¾ tsp. Garlic, minced in oil, or refrigerated garlic paste
PREPARATION

  1. In a mixing bowl, combine par-cooked and chilled sweet potatoes, carrots, red bell peppers, peas, swiss chard and garlic.
  2. Toss to blend evenly.
  3. Place into 20 - 24 oz. oven-safe, microwaveable grab & go container.
  4. Top evenly with drizzle of one Custom Culinary® Gold Label Portion Control Alfredo Sauce pack.
  5. Cover, label, date and keep refrigerated, per local HACCP guidelines.
 
CONSUMER HEATING INSTRUCTIONS (for meal kit and grab & go applications)
 
To Heat to 165˚ F Before Eating:
 
Microwave
  1. Remove plastic lid and label before heating.
  2. Place in center of microwave, away from walls
  3. Heat for 3-4 minutes.
  4. Remove and carefully toss with a fork until all ingredients are evenly coated with sauce.
Heat only one meal at a time. Do not cover with any type of material. If oven has a metal shelf remove before heating. Microwaves vary in power; cooking times may need to be adjusted. Use caution, as tray may be hot to the touch.
 
Conventional Oven
  1. Preheat oven to 350˚ F.
  2. Remove plastic lid and cover before heating.
  3. Place tray directly on oven rack and bake for approximately 35 - 40 minutes.
  4. Remove and carefully toss with a fork until all ingredients are evenly coated with the sauce.
 
Optional Garnish
Top with fresh grated parmesan, and/or your favorite fresh herb (basil, fennel tops, etc.)
