Thai-Style Stuffed Tomatoes

Yield: 12 servings

Amount Ingredients
2 cups Long Grain Rice (Uncooked)
1 Tbsp. Butter
3 cups Water
2 Tbsp. Custom Culinary® Gold Label Chicken Base, No MSG Added
1 lb. Chicken, 1/4 Inch Small Diced
12 each Beefsteak Tomatoes (Medium Sized)
16 oz. Custom Culinary® Gold Label Thai-Style Red Curry Sauce
2 cups Crunchy Noodles

  1. Preheat oven to 350ºF.
  2. Bring water and Gold Label Chicken Base to a boil.
  3. In a separate sauté pan over medium heat, add butter and sauté rice until grains are well coated with butter. Do not allow grains to brown.
  4. Add the hot chicken stock to the rice.
  5. Return liquid to a boil. Reduce heat to low, cover and cook 20 minutes until rice is tender and liquid is absorbed. Set aside.
  6. In a skillet over medium heat, cook the chicken until evenly browned.
  7. Take the tomatoes; remove and discard the tops, seeds and membranes. Arrange the tomatoes in a baking dish with the hollowed sides facing upward.
  8. In a bowl, combine the chicken, cooked rice, and half of the Gold Label Thai-Style Red Curry Sauce. Add salt and pepper if desired.
  9. Spoon equal amounts of the mixture into each hollowed tomato. Pour the second half of the Gold Label Thai-Style Red Curry Sauce over the tops of the tomatoes.
  10. Bake 20-25 minutes until tomatoes are tender.
  11. Remove from oven and serve.
