Yield: 1 gallon

Amount Ingredients
1 cup Celery, Diced
1 cup Onions, Diced
1 cup Carrots, Diced
1 cup Butter, Lightly Salted
1-1/2 cups Flour
24 each Peppercorns, Whole Black
1-1/2 cups Parsley, Freshly Chopped
6 oz. Custom Culinary® Gold Label Beef Base
1-1/2 gal. Water
1-1/2 qts. Tomato Purée
5 oz. Worcestershire Sauce
PREPARATION

  1. In a 2 gallon sauce pot, melt butter over medium high heat. Add celery, onion, and carrots. Sauté 3-5 minutes, sitrring frequently.
  2. Gradually add flour while sitrring until well blended. Sauté over low heat 2-3 minutes, stirring constantly.
  3. Add water, Gold Label Beef Base, pepper corns, parsley, tomato puree and worcestershire sauce, mixing well. Gently boil 30-45 minutes, stirring occasionally. Strain. Adjust seasoning as needed.
