Homestyle Turkey Gravy

2 cups Celery, Diced
2 cups Onion, Diced
1 cup Turkey Drippings from Roaster
2 Tbsp. Sage
1 Tbsp. Rosemary
2 Tbsp. Garlic, Crushed
1 cup Flour
1 gal. Water
2 oz. Custom Culinary® Gold Label Turkey Base
1 Tbsp. White Pepper
PREPARATION

  1. In a large roasting pan, roast turkey in a 325°F oven until internal temperature is 165-175°F. Let rest 10-15 minutes. Drain fat and set aside 1 cup
  2. In a 2 gallon sauce pot, add celery and onion. Saute 3-5 minutes, stirring frequently.
  3. Add flour, mixing well. Cook 3-5 minutes, stirring constantly.
  4. Add water, Gold Label Turkey Base, sage, rosemary, and garlic, mixing well. Heat to boiling. Reduce heat and gently boil 5-7 minutes, stirring frequently. Strain.
