Mole Ahogada sandwich

Elevating the classic sandwich with unique flavors and ingredients, Featuring Custom Culinary® PanRoast® Pork Flavored Gravy and Mole Negro, Mole Ahogada Sandwich is made up of pickled red onion, cotija cheese, green onion, and chicken inside of a hoagie roll.

1-1/2 cups Custom Culinary® PanRoast® Pork Flavored Gravy, Prepared, Hot
1-1/2 cups
Custom Culinary® 
Mole Negro, hot
12 ea. Hoagie Roll, Toasted
48 oz. Chili Braised, Boneless, Skinless Chicken Thighs, Large Diced
18 oz. Pickled Shaved Red Onion
12 oz. Cotija Cheese
12 Tbsp. Green Onion, Shaved

  1. In a small sauce pan over medium high heat, blend prepared PanRoast® Pork Flavored Gravy with the Mole Negro, reduce heat and simmer 3-5 minutes to fully infuse the flavors. Remove from heat and hold warm.
  2. Place 1 ea. toasted slice of hoagie roll on a plate.
  3. Top with 4 oz. hot chili braised diced chicken.
  4. Top with 1.5 oz. pickled red onions and 1 oz. cheese.
  5. Drizzle with 2 oz. of hot mole pork gravy.
  6. Garnish with 1 Tbsp. green onions.
