Yield: 1 gallon

Amount Ingredients
1 cup Celery, Diced Fine
1 cup Onion, Diced Fine
1 cup Carrot, Diced Fine
1 cup Butter, Lightly Salted
1-1/2 cups Flour
1 tsp. Black Pepper, Ground
1 cup Parsley, Freshly Chopped
6 oz. Custom Culinary® Gold Label Pork Base
1 gal. Water
1 tsp. Rosemary, Leaves

  1. In a 2 gallon sauce pot melt butter over medium heat. Add celery, onions, and carrots. Sauté over medium heat for 5-7 minutes, stirring frequently.
  2. Add flour, mixing well over medium heat for 3 minutes.
  3. Add water, Gold Label Pork Base, pepper, parsley and rosemary, mixing well. Heat to a gentle boil for 20-25 minutes, stirring frequently. Strain.
