Hong Kong Mushroom Sauce

A robust seasoning to add umami to any dish. Featuring Custom Culinary® Gold Label Mushroom Base, Hong Kong Mushroom Sauce combines the bold flavors of shiitake mushrooms, orange, Szechwan peppercorns, Chinese chili sauce, ginger, soy sauce, dry sherry, and cream.

Yield: 1 gallon

Amount Ingredients
1/2 lb. Shiitake Mushroom caps, Julienne Cut
2 oz. Sesame Oil
1/4 cup Custom Culinary® Gold Label Mushroom Base
1/4 cup Orange Peel, Grated
1/2 Tbsp. Szechwan Peppercorns, Crushed
1/2 Tbsp. Chinese Chili-Garlic Sauce
1 oz. Ginger, Finely Minced
1/2 cup Light Soy Sauce
2 cups Dry Sherry
2 qts Cream

  1. In a 2 gallon sauce pot heat oil over medium high heat. Add shitake mushrooms. Sauté 3-5 minutes, stirring frequently.
  2. Add Gold Label Mushroom Base, orange peel, peppercorns, chili-garlic sauce and ginger. Sauté 2-3 minutes, stirring constantly.
  3. Add soy sauce and sherry, reduce by half. Add cream, mixing well. Heat to boiling. Reduce by 1/3, stirring frequently.
