Hunter Sauce (Chasseur)

A classic sauce to add rich flavor to any dish. Featuring Custom Culinary® Gold Label Demi-Glace Sauce, Hunter Sauce combines the earthy flavors of mushrooms, onions, dry white wine, tomatoes, and fresh tarragon.

Yield: 80 ounces

Amount Ingredients
1/4 cup Olive Oil
1-1/2 cups Mushrooms of Choice, Sliced
1 cup Onions, Small Diced
1/2 cup Dry White Wine
1 cup Tomatoes, Diced
1 Tbsp. Tarragon, Fresh Chopped
64 oz. pouch Custom Culinary® Gold Label Demi-Glace Sauce, Hot
PREPARATION

  1. In a suitable sauce pan over medium high heat, sauté mushrooms and onions in olive oil for one minute until onions are translucent.
  2. Add dry white wine, tomatoes and tarragon. Cook 2 minutes.
  3. Add Gold Label Demi-Glace Sauce, blend thoroughly and bring to a boil.
  4. Reduce heat and simmer 10-15 minutes. Adjust seasoning to taste.
