Amount Ingredients
1-1/2 qts. Water, Hot
3 oz. Custom Culinary® Gold Label Low Sodium Beef Base
2 oz. Shallots, Minced
4 cloves Garlic, Minced
2-1/2 Tbsp. Thyme Leaves, Dried
2 oz. Tomato Paste, Low Sodium
1-1/2 Tbsp. Black Pepper, Coarse Ground
1/2 cup Dijon Mustard, Smooth
1/2 cup Corn Starch
PREPARATION

  1. In a 2 quart sauce pot combine hot water and Gold Label Low Sodium Beef Base, mixing well.
  2. Transfer ½ cup of the stock to a small bowl and chill
  3. To the remaining hot stock, add shallots and garlic. Heat to a gently boil. Cover and let simmer 3-5 minutes, stirring occasionally.
  4. Add thyme, tomato paste, black pepper and mustard, mixing well. Heat to boiling. Reduce heat and simmer 3 minutes, stirring frequently.
  5. Combine the reserved, chilled 1/2 cup stock and corn starch, mixing well with a wire whip. Gradually add the corn starch and water slurry to boiling liquid, stirring constantly with a wire whip. Gently boil 3-5 minutes, stirring occasionally.
