Veracruz Sauce

A traditional sauce to add robust flavors to any dish. Featuring Custom Culinary® Gold Label Chicken Base, Veracruz Sauce combines the flavors of onions, bell peppers, diced tomato, white wine, black olives, and capers.

Recipe Ingredients

Yield: 1 1/2 gallons

Olive Oil
1 cup Onions, Medium Diced
1 cup Red and Green Bell Peppers, Medium Diced
2 cups Water
1(#10) can Diced Tomato
6 Bay Leaves
1 Tbsp. Oregano
2 cups Dry White Wine
½ cup Black Olives, Sliced
¼ cup Capers
½ cup Parsley, Fresh Chopped

  1. In a large sauce pan, heat olive oil over medium high heat.
  2. Add onions, peppers and garlic. Saute over medium high heat 5-7 minutes, stirring frequently.
  3. Add water, Gold Label Chicken Base, tomatoes, bay leaves, oregano, and white wine. Heat to boiling. Reduce heat and gently boil 20-30 minutes, stirring occasionally. Remove bay leaves.
  4. In a food processor puree ingredients until smooth. Return to sauce pot or steam jacketed kettle. Add black olives, capers and chopped parsley. Heat to boiling. Reduce heat and gently boil 15-20 minutes, stirring occasionally.
  5. Hold above 140 °F or chill below 40 °F
