Croissant Pecan Turkey Dressing

Yield: 7 quarts

Amount Ingredients
1 lb. Onion, Diced
1/2 lb. Celery, Diced
8 oz. Butter
2 oz. Custom Culinary® Gold Label Turkey Base
1 qt. Water
1 pint Half & Half
4 oz. Pecans, Pieces
5 oz. Gold Raisins
7 lbs. Croissant, Diced Fine, Dried
16 Eggs, Beaten
1 cup Basil, Fresh, Chopped
PREPARATION

  1. In a large braising pan melt butter over medium high heat. Add onions and celery. Saute 5-7 minutes, stirring frequently.
  2. Add Gold Label Turkey Base, water, half and half, pecans, and raisins. Heat over medium heat, mixing well.
  3. Add diced croissant, eggs and basil, mixing well.
  4. Add dressing mixture to a buttered baking pan. Bake at 350°F for 30-35 minutes or use to stuff an 18-22 lb. turkey.
