Amount Ingredients
6 oz. Custom Culinary® Gold Label Chicken Base
2 gal. Water
12 lbs. String Beans, Green, Trimmed
1/4 cup Olive Oil, First Press
8 cloves Garlic, Minced
8 Chili Peppers, Diced
2 Tbsp. Ginger, Fresh Grated
2 tsp. Cumin, Ground
1/2 cup Orange Zest
1/2 cup Orange Juice, Fresh
1/2 cup Lime Juice
2/3 cup Coconut Milk
1/2 tsp. Black Pepper
8 oz. Coconut Flakes, Toasted

  1. In an 8 gallon sauce pot or 10 gallon steam jacketed kettle, heat water to boiling. Add Gold Label Chicken Base, mixing well. Add green beans. Cook until al dente. Drain and chill in cold water then drain thoroughly.
  2. In a large sauté pan, heat olive oil over medium high heat. Add garlic, peppers, ginger and orange zest. Sauté over medium heat 3-5 minutes, stirring constantly.
  3. Add orange juice, lime juice and coconut milk. Heat to boiling, stirring frequently. Add green beans and peppers. Toss and heat until hot throughout. Top with toasted coconut flakes.
