Amount Ingredients
3 oz. Custom Culinary® Gold Label Chicken Base
2-1/2 Quarts Water
1 lb. Yellow Cornmeal
6 oz. Butter

  1. Dissolve Gold Label Chicken Base in water. Bring to a boil. Rain in cornmeal, whisking constantly to insure no lumping. Cook over low heat for 45 minutes, stirring occasionally.
  2. Stir in butter.
  3. Spread on tray to a depth of 1/2-inch, let cool. Cut polenta into squares and reheat for service.
