Chicken Tortilla Soup

A robust combination of hearty flavors that your guests can hunker down with anytime of the year. What You'll Need

1 gallon Water
½ cup Custom Culinary® Label True Foundations™ Chicken Liquid Stock Concentrate
2 cups Onions, Spanish, medium dice,
2 cups Celery, medium dice
1 cup Carrots, medium dice
  Passport Global Flavors™ by Custom Culinary® Tomatillo Serrano Sauce
4 cups Tortilla, chips, corn, crushed (preferably house made)
¾ cup Cilantro, leaves, chopped
4 cups Chicken, cooked, shredded, rotisserie style
1 cup Green chilies, diced, canned
   
garnish Radishes, whole, sliced, ¼” thick
garnish Avocado, diced, ½” cubes
garnish Cilantro, leaves, torn
garnish Lime
garnish Tortilla strips, ¼” 
PREPARATION

  1. In a large rondo or stockpot add the water, chicken liquid stock concentrate, onions, celery and carrots and cook until the vegetables are fork tender.
  2. Add tomatillo sauce, tortilla chips and cilantro and cook until the chips break apart and lend their body to the thickness of the broth.
  3. Next add the cooked chicken and green chilies and simmer over medium heat until chicken is warmed through.
  4. To serve, garnish a bowl of the soup with radishes, avocado cilantro, lime and your favorite hot sauce.
