Yield: 5 gallons

Amount Ingredients
3 lbs. Beef Top Round, Medium Diced
1/4 cup Vegetable Oil
2 lbs. Onion, Medium Diced
1 lb. Celery, Medium Diced
1 lb. Carrots, Medium Diced
1 lb. Custom Culinary® Gold Label Beef Base
4 gal. Water
2 lbs. Egg Noodles
1 cup Parsley, Chopped
1 tsp. Black Pepper, Ground
PREPARATION

  1. In an 8 gallon sauce pot or 10 gallon steam jacketed kettle heat oil over medium high heat. Add beef. Brown evenly over medium high heat, stirring frequently.
  2. Add onion, celery and carrots. Sauté 5-7 minutes over medium high heat, stirring frequently.
  3. Add Custom Culinary® Gold Label Beef Base and water. Gently boil 30-45 minutes, stirring occasionally.
  4. Add noodles. Gently boil 12-15 minutes until noodles are al dente.
  5. Add parsley and black pepper, mixing well.
