Yield: 5 gallons

Amount Ingredients
1 lb Bacon, Raw, 1/2" Diced
10 oz. Butter
1 lb Onions, 1/4" Diced
1 lb Celery, 1/4" Diced
1 lb Green Bell Pepper, 1/4" Diced
2 Tbsps Garlic, Chopped
1-1/4 lbs Flour
8 oz. Custom Culinary® Gold Label Clam Base
1 gal Heavy Cream
2 gals Milk
5 lbs Crab Meat, Snow
2 lbs Potatoes, 1/4" Diced
2 lbs Corn, Frozen & Thawed
1/4 cup Parsley, Chopped
1 tsp. Cayenne, Ground
PREPARATION

  1. In an 8 gallon sauce pot or 10 gallon steam jacketed kettle, add bacon and cook until lightly browned. Do not drain fat.
  2. Add butter, onions, celery, green peppers, and garlic. Sauté over medium high heat 5-7 minutes, stirring frequently.
  3. Stir in flour. Cook over medium heat 3-5 minutes, stirring constantly.
  4. Add milk, cream, Custom Culinary® Gold Label Clam Base and potatoes, mixing well. Heat to boiling. Reduce heat and gently boil 20-30 minutes, stirring occasionally until potatoes are al dente.
  5. Add corn, crab meat, parsley, and cayenne pepper, mixing well. Gently boil 5-7 minutes, stirring occasionally.
