Amount Ingredients
12 oz. Custom Culinary® Gold Label Chicken Base
3 gal. Water, Hot
3 lbs. Tofu, Diced
3 lbs. Mushrooms, Sliced
3 lbs. Chicken, Cooked, Chopped
3 lbs. Carrots, Julienne
4 cups Green Onions, Diced
3 cups Red Wine Vinegar
1/4 cup Soy Sauce, Dark
3 Tbsp. White Pepper
1-1/2 Tbsp. Chinese Chili Sauce
1 cup Cornstarch
1 cup Water
18 Eggs Scrambled, Raw
PREPARATION

  1. Dissolve Custom Culinary® Gold Label Chicken Base in water. Bring to a boil.
  2. Add all ingredients to stock. Bring to a boil. Reduce heat and simmer 30 minutes.
  3. Combine cornstarch with water to make a slurry. Bring soup to a boil and stir in cornstarch. Reduce heat and simmer. Stir in eggs.
