Yield: 5 gallons

Amount Ingredients
2 lbs. Wild Rice
4 Red Bell Pepper, Finely Diced
1 lb. Celery, Finely Diced
1 lb. Onion, Finely Diced
1/2 lb. Carrot, Finely Diced
1/2 cup Olive Oil
1 lb. Custom Culinary® Gold Label Chicken Base
2 Tbsp. Garlic, Minced
4 gal. Water
4 lbs. Frozen Corn, Kernel, Thawed
1 tsp. White Pepper, Ground

  1. Cook wild rice following package instructions. Drain. Set aside.
  2. In an 8 gallon sauce pot or 10 gallon steam jacketed kettle heat olive oil over medium high heat. Saute peppers, celery, onions, garlic, and carrots for 5-7 minutes, stirring frequently.
  3. Add water, Custom Culinary® Gold Label Chicken Base, corn, wild rice and peppers. Heat to boiling. Reduce heat and gently boil 7-10 minutes, stirring frequently.
