Mediterranean White Bean Soup

Mediterranean White Bean Soup

Serve up this aromatic, flavorful soup of cannellini beans, spinach, artichokes and fresh herbs, simmered in a broth made with Custom Culinary® Gold Label True Foundations™ Chicken Liquid Stock Concentrate.

What You'll Need

1 Tbsp olive oil
1 ea onion, large, chopped
2 ea garlic cloves, minced
1 ea carrot, large, chopped
1 ea celery rib, chopped
6 cups water
1 Tbsp Custom Culinary® True Foundations™ Liquid Vegetable Stock Concentrate
1 tsp thyme, dried
½ tsp oregano
2 oz artichokes, sliced
15 oz cannellini beans, (one can) drained and rinsed
2 cups baby spinach
to taste parsley, fresh, for serving
to taste parmesan cheese, grated,  for serving
PREPARATION

  1. In a large pot or saucepan, heat olive over medium high heat.
  2. Add onions and cook until onions are translucent, about 3-5 minutes.
  3. Add the garlic, carrots, celery, thyme, oregano, salt and pepper, and cook for an additional 2-3 minutes.
  4. Add water, vegetable base and beans, bring to a boil.
  5. Reduce heat and simmer for 15 minutes to combine all of the flavors together.
  6. Stir in the spinach and continue to simmer until the spinach wilts, about 2 minutes.
  7. Remove from heat, sprinkle fresh parsley and grated parmesan cheese, if desired, and serve immediately.
